Lime Squares with Pistachio Graham-Cracker Crust

Martha gets it right sometimes. She made lime squares with pistachio graham cracker crust. Lime squares. Pistachio graham cracker crust. Genius.

This is what I think happens when a key lime pie and a lemon bar gets married - they make lime square babies. It’s creamy and tangy like key lime pie, but has the thick, crunchy crust from a lemon bar. It’s simple to make, delicious, and incredibly refreshing. Martha, I have to hand it to you. This really is a “good thing”.

Lime Squares with Pistachio Graham-Cracker Crust
Recipe from Martha Stewart | Makes 16

For the crust:
4 tablespoons (1/2 stick) unsalted butter, melted and cooled, plus more for pan
2/3 cup shelled pistachios
1 cup (4 ounces) graham-cracker crumbs
1/4 cup sugar
1 tablespoons grated lime zest

For the filling:
2 large egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup fresh lime juice

1. Preheat oven to 350 degrees. Brush an 8-inch square baking dish with melted butter. Line bottom with parchment paper, leaving a 2-inch overhang on two sides.

2. In a food processor, finely grind pistachios with graham-cracker crumbs, sugar, and zest. Blend in butter. Press mixture into bottom and 1 inch up sides of prepared pan. Bake until lightly browned, 8 to 12 minutes. Cool crust, 30 minutes.

3. To make the filling: In a large bowl, whisk together egg yolks and condensed milk. Add lime juice; whisk until smooth. Pour filling into cooled crust; carefully spread to edges.

4. Bake until set, about 15 minutes. Cool in pan on rack; then chill at least 1 hour before serving. Using parchment paper overhang, lift out of pan, and transfer to a cutting board. With a serrated knife, cut into 16 squares, wiping knife with a damp kitchen towel between each cut. To store in refrigerator, cover with plastic wrap.

ingredients-close.jpg Ok, let’s get started. Eggs…check, condensed milk…check, limes…yup. Simplest filling ever. By the way, I never ended up using this many limes. I had some left over from making mojitos the other day. Surprisingly, I only used three limes for this recipe.

condensed-milk.jpg Condensed milk, how I love you. I try to stay away from you as much as I can, but you just keep coming back. I rarely see American recipes using condensed milk, I see it more in Asian and Hispanic recipes. Either way, it is always so good.

So, I was really dumb. For some reason, I thought I was making some kind of cake or pie, not bars. So I made the whole thing in a springform pan. ::smacks forehead:: When I make this again, I’m going to use a regular 8×8 inch glass pan.

parchment-measure.jpg Oh well. I’m including these photos anyway to show how I line a round pan with parchment paper. I basically cut out a square the size of the pan, fold it up into a triangle, place the tip of the triangle in the center of the pan, and cut a round edge where the pan ends. It always works (thanks, Alton Brown).

pistachios-ground.jpg Pistachio crumbs smell so good! I was really hoping the green color would stay after baking the crust but unfortunately it didn’t.

    OK. I am absolutely starved right now.

    Anything with condensed milk has to be super good!

    I need to try this. I love key lime pie.. so I have no doubt that I’ll love this.
